Grilled Chicken Flatbread

Flatbread cooked right on the grill grates, topped with charred chicken and vegetables, finished with thin green ribbons of SoCal Original Avocado after it comes off the heat. It eats like pizza but takes fifteen minutes and never turns your kitchen on.
Ingredients
Chicken
- 1 pound boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- Salt
Vegetables
- 1 red bell pepper, quartered
- 1 small zucchini, sliced lengthwise
- ½ red onion, cut into thick rounds
- 1 tablespoon olive oil
- Pinch of salt
Flatbread
- 2 flatbreads or naan
- 1 tablespoon olive oil
- 1 garlic clove, grated
- 1½ cups shredded low-moisture mozzarella
To finish
- SoCal Original Avocado, for drizzling
- Chopped fresh cilantro
- Lime wedges
Directions
- Season the chicken with the oil, chili powder, garlic powder, cumin, and salt. Grill over medium-high heat 5 to 6 minutes per side until cooked through (165°F). Rest a few minutes, then cut into bite-size cubes.
- Grill the vegetables alongside the chicken until charred and tender, turning once. Chop them rough.
- Stir the grated garlic into the olive oil and brush both flatbreads on one side.
- Lay the flatbreads oiled-side down on the grates for 1 to 2 minutes, just until marked. Flip them.
- Top with the mozzarella, then the chicken and vegetables. Close the lid for 2 to 3 minutes until the cheese melts and the bottoms crisp. Watch them — flatbread goes from crisp to burnt fast.
- Off the grill, drizzle thin ribbons of Original Avocado across the top. A little goes a long way.
- Scatter with cilantro, squeeze a lime wedge over, slice, and serve with extra Original Avocado on the side.
Tips
No grill? A 450°F oven and a sheet pan get you most of the way there. Par-toast the flatbreads 2 minutes before topping.
Thighs beat breasts here. They stay juicy over direct heat and take on more char.
Always drizzle after the flatbread comes off the heat so the avocado green stays bright.
