- 6 slices provolone or sharp cheddar
- 2 tablespoons melted butter
- ¼ cup blue cheese crumbles

Directions
- Heat the oven to 325°F. Season the beef chunks all over with salt, pepper, and garlic powder.
- Heat the oil in a Dutch oven over medium high. Sear the beef 3 to 4 minutes per side until deeply browned. Add the onion and broth, cover, and braise in the oven 2½ to 3 hours until the beef shreds easily with a fork. Shred it right in the pot with two forks and toss with the onions and a few spoonfuls of the juices. Discard the rest of the liquid. (A slow cooker on high for 4 to 5 hours works the same.)
- Raise the oven to 350°F.
- Melt the 4 tablespoons of butter in a saucepan over low heat. Whisk in the Original Red and grated garlic until smooth and glossy. Toss the shredded beef in the sauce until every piece is coated.
